Pork Chile Verde

This is a great mexican soup that is easy to make.

Ingredients
  • 1 pound pork tenderloin, cubed
  • 1 large onion, chopped
  • 1 large yellow bell pepper, chopped
  • 1 large red bell pepper, chopped
  • 4 cloves garlic, minced
  • 4 large carrots, peed and chopped
  • 1½ tablespoons ground cumin
  • 2 teaspoons dried oregano
  • 2 bay leaves
  • 2 10-ounce cans mild green enchilada sauce
  • 4 cups chicken broth
  • 1 cup water
  • 2 teaspoons Kosher salt
  • 2 16-ounce cans great Northern beans, drained
  • ½ cup long grain rice, uncooked
Instructions
  1. In a large bowl brown pork
  2. Add onion, bell peppers, garlic, and carrots
  3. Cook and stir until onions softens slightly
  4. Add remaining ingredients
  5. Bring to a boil
  6. Reduce heat, cover, and simmer 20-30 minutes or until carrots and rice are tender
  7. To serve ladle into bowls and garnish as desired
  8. Serve with tortilla chips or warm tortillas
